Scientifically know as adenosine triphosphate (ATP), it is the “energy currency” of the cell and provides readily releasable energy. ATP can be created using a variety of substrates, but our brain cells can only use two things for energy — glucose from carbs, or ketones.
We feel our best when our blood sugar and insulin levels remain relatively stable. However, when we consume high amounts of simple sugars like those contained in fast and packaged foods, blood sugar can rise rapidly and lead to a surge of insulin production and release followed the so-called crash.
